This is our homage to Chef Paul Prudhomme who made this popular at K-Paul's Louisiana Kitchen. Traditional blackening comes from butter and spices being seared in a cast iron skillet to give the chicken a great crust and flavor and we are firm traditionalists when it comes to this dish.
